The province of Jaen, in the south of Spain, has an authentic olives trees ocean. More than 60,000,000 of trees grow here since hundreds of years, allowing the province to be able to produce the 20% of the olive oil in the world. Only the province of Jaen produces even more than all Italy, the 2nd. world's biggest producer.

Extra virgin olive oil is in some way quite simple. All you need is harvest the olives, transport them to the mill, and process the olives. The procedure is made on a daily basis during the harvest season (from October to February usually) to guarantee the best quality of the product.. Once in the mill, to be pure EVOO, just apply the following.
First cold pressed
Using only mechanical procedures
Not centrifuged but decanted
Absolutely no mixes
Just pure olives juice
